2 medium potatoes - peeled - cut into sticks
3 tbsp. yogurt
1/2 tsp fresh ginger - peeled and minced
1/2 tsp cayenne pepper
1/4 c. dried coconut - Unsweetened
6 whole garlic cloves
1 cinnamon stick
1 bay leaf
1 1/2 tsp cumin seeds
3 tbsp. oil
1 cup rice - uncooked
3/4 tsp turmeric
1 tsp brown sugar
1 tsp salt
1 tsp lime juice
2 cups water
1/2 c. frozen peas
1 tbsp. butter

Directions:
Directions:
Combine yogurt, ginger, minced garlic, cayenne pepper and coconut in a large bowl. Add potatoes, tossing to coat. Set aside to marinate.

In a large skillet heat the oil and add the garlic cloves, cinnamin stick, bay leaf and cumin seeds. Cook 1 to 2 minutes until fragrent. Add potato mixture and cook for 15 minutes, stirring occasionally. Once potatoes are brown add rice and cook another minute. Add the tumeric, brown sugar, lime juice and water. Bring to a boil; reduce heat, cover and cook UNDISTURBED for 15 minutes. Add peas, DO NOT STIR, cook additional 5 minutes then fluff with fork. If using cilantro add before fluffing.
