1 Avocado
2 Eggs
Salt and pepper
Fresh herbs if you like

Preheat oven to 450º.
Cut avocado in half. Cut a small slice off bottom of both half of the avocado so it does not tip on the baking sheet.
Use a spoon to scoop out pit and make the indentation large enough to hold your egg.
Place cracked egg into each half.
If desired place a small pat of butter on top of egg.

Bake for 10-14 minutes.

Serve with toast, sprinkle with your choice of spices. Salt, pepper, rosemary, etc.
