1 16 ounce can artichoke hearts, rinsed and drained, cut into 1/2" pieces
1 cup mayonnaise (can use half mayo and half Greek yogurt)
1 cup parmesan cheese, canned or grated - or a mixture of both

Optional Additions:
Jalapeno peppers, chopped - to taste
Sun-dried tomatoes, chopped - to taste (I added one teaspoon sun-dried tomato pesto)
Red pepper flakes, to taste
Etc. - use your imagination!!

Preheat oven to 375º. Grease a 9" x 13" baking pan. Mix together all ingredients and spread evenly in pan. Bake for 20 minutes or until golden and bubbly. Serve hot!
