Crust
2 cups graham cracker crumbs
2 tablespoons sugar
1 stick melted butter

Cheesecake
2 8 oz packages cream cheese
3 eggs
1 cup sugar
1 teaspoon lemon rind

Topping
1 cup sour cream
1 teaspoon vanilla
2 tablespoons sugar

For the crust :
In a bowl combine graham cracker crumbs, sugar and melted butter. Stir until graham crackers are moist. Set aside 2 tablespoons for garnish. Press remaining mixture into bottom and 1 inch up sides of springform pan to form crust:

For the Topping:
Combine sour cream, sugar, and vanilla. Mix well. Set aside.

For the cake:
Preheat oven to 300°F. Cream cheese and sugar in mixer. Add in eggs one at a time until well mixed. Add in lemon rind. Pour mixture into crust. Bake for 1 hour. Turn oven off and leave cheesecake in oven with door shut for 30 minutes. Remove cheesecake from oven and pour sour cream topping onto cheesecake. Place back in oven for 30 more minutes. Remove from oven and add graham cracker mix for garnish. Let cool to room temperature. Store in refrigerator.
