6-8 chicken breasts (small to medium sized breasts work best)
Flour to dredge, salt and pepper
1/4 cup salad oil
2 tbsp. butter
1/2 cup sherry or any white wine
2 can cream of mushroom soup
1 cup sour cream
1 can chicken broth
5 cups broccoli florettes, frozen
1 cup cheddar cheese

Dredge breasts in flour seasoned with salt and pepper
In a large, heavy skillet brown the chicken in oil and butter, about 30 minutes. Remove from skillet and add wine to deglaze. Add the soup mixed with sour cream and broth. Stir well. Meanwhile microwave the broccoli according to directions.

In a casserole dish layer the broccoli, then chicken, then sauce, then cheese

Bake at 350 degrees for about 45 minutes. Insert a meat thermometer to ensure chicken is cooked.
Broil if desired to achieve more browning.

I made this casserole many times during the "casserole era." Tried it again recently and it still seems satisfying and flavorful. I think I will add a bit of thyme and sage the next time I cook it.
