Turtle Pie Recipe

3 C pecans (divided)
¼ C granulated sugar
¼ C butter or margarine, melted
1 pkg Kraft caramels (14 oz bag or 11oz + 8 caramels), unwrapped
⅔ C whipping cream (divided)
8 oz semi-sweet chocolate squares
¼ C confectioner sugar
½ tsp vanilla

Preheat oven to 350º.

Chop 2 cups of pecans in food processor until fine ground. Mix with margarine/butter and sugar. Press into 9” pie tin and bake approximately 12 minutes or until lightly browned. Remove from oven and use back of spoon to press down any areas that puffed up during baking. Cool completely.

Microwave caramels and ⅓ C of whipping cream on high for 2 minutes, until melted. Mix well and pour into crust. Cool slightly.

Chop1 cup of pecans in food processor until fine ground and spread over layer of caramel.

In a sauce pan heat chocolate, confectioner sugar, ⅓ cup whipping cream, and vanilla. Cook until melted and smooth. Spread over layer of pecans.

Optional: garnish with pecans.

Refrigerate for at least 2 hours before serving.
