SALAD:
2/3 cup quinoa
1 1/3 cup water
1 bunch of kale, torn into bite-sized pieces
1/2 avocado, peeled, pitted, and diced
1/2 cup cucumber, chopped
1/3 cup red bell pepper, chopped
2 Tbsp green onion, chopped
Feta cheese, crumbled

DRESSING:
1/4 cup olive oil
2 Tbsp lemon juice
1 1/2 Tbsp Dijon mustard
3/4 tsp sea salt
1/4 fresh ground black pepper

Directions:
Directions:
1. Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium low, cover, simmer until quinoa is tender and water is absorbed (about 15-20 minutes).
2. While quinoa is cooking, whisk ingredients of dressing together and set aside.
3. Add kale to hot quinoa and mix until kale is dark green. Set aside to cool
4. Add veggies and feta and mix
5. Serve with Lemon Dijon Vinaigrette- do not add dressing until ready to eat.

This ia a delicious and hearty salad. If you add grilled shrimp or chicken, this makes a wonderful meal.
