1 lb cauliflower
4 oz sour cream
1 cup finely shredded cheddar cheese
4 slices bacon, cooked and crumbled
2 tbsp green onions
2 tbsp butter
¼ tsp garlic powder

Directions:
Directions:
Cut cauloflower into florets and place in a mocrowave safe bowl. Add a couple teaspoons water, cover with plastic wrap, and microwave for 5-8 minutes, until completely cooked and tender. Drain water, and place cauliflower in a food processor, and process until fluffy. Add butter, garlic powder, and sour cream, and process until mixture resembles mashed potatoes. Transfer mixture to a bowl, and add green onions and half the cheese, and mix to combine. Top with remaining cheese and bacon. Microwave once more just long enough to melt cheese.
