3/4 c. melted butter
1/2 c. light brown sugar
1 tsp. vanilla
3 c. quick cooking or instant oats
7 oz. semi-sweet chocolate chips
2/3 c. peanut butter
1 c. chopped salted peanuts

Directions:

Use a cupcake/muffin tin lined with cupcake liners.

In a microwave-safe bowl, stir melted butter, sugar and vanilla until sugar dissolves. Then stir in oats. Microwave for 1 minute, then stir again.

Press 2 Tbsp. of the mixture into the bottom of each cup.

Melt chocolate and peanut butter, stir until smooth. Then stir in chopped peanuts.

Spoon mixture over the oat layer and spread evenly. Top with remaining oat mixture and press down gently.

Cover and refrigerate for 3-4 hours, or overnight.

Pop the cups out of the pan. Store in airtight container at room temperature for a few days or in the fridge for up to 2 weeks. Can also store in the freezer. Thaw before serving.
