3 T. butter
4-5 large onions (should = 5 c. diced)
1T. flour
½ tsp. sugar
3 c. water
¼ tsp. peppercorns
32 oz. beef broth
1 bay leaf
¼ c. dry red wine (can be omitted)
Salt, to taste

Directions:
Directions:
Slice or dice onions.
Heat butter in heavy sauce pan over medium heat.
Add onions, peppercorns and sugar.
Cook, stirring frequently, until onions begin to brown.
Sprinkle flour over onions and cook one minute, stirring constantly.
Add beef broth, water, salt and bay leaf.
Bring to boiling.
Lower heat to simmer, simmer for 40 minutes.
Remove bay leaf.
