1 c. sugar
1 tsp. vanilla
½ tsp. salt
½ c. shortening
1 c. brown sugar
3 eggs, separated
1 c. sifted flour
1 heaping tsp baking powder
½ c. margarine (for skillet)
1 (8oz.) can sliced pineapple, drained (reserve juice)

- Melt margarine in heavy iron skillet or coat an 8 x 8 – inch pan with melted margarine. Add brown sugar. Place pineapple slices on brown sugar. (You may also add maraschino cherries and pecans.) While this is soaking, mix your batter.
- Beat egg yolks with one cup sugar. To this, add 5 tbsp. reserved pineapple juice. Sift flour and baking powder and add to the batter. Add beaten egg whites.
- Bake at 375º for 30 minutes.
