3# Your Desired BEEF ROAST and seasoned with salt and pepper
2 yellow onions sliced medium
1/4 C olive oil
2 TSP minced garlic
2CUPS red wine
1 can beer
32 Ounces or a little extra beef or chicken broth
1/2 Cup Flour
2# Brussels sprouts trimmed
6 white potatoes quartered
8 carrots


Directions:
Directions:
Brown beef in oil, add onions and flour, and cook till onions soft and flour brown. Add wine and beer and deglaze pot. Boil hard 30 mins. Add broth. Boil hard another 30 minutes. Add water as needed to maintain liquid level through all boiling. Check beef for tenderness. If starting to get soft, proceed, otherwise check every 10 minutes till beef starts to soften. Add Brussels sprouts and boil 10 mins. Add potatoes and boil 10 minutes. Add carrots and boil 10 minutes and serve over rice.
