4 eggs
1⅔ c. sugar
1 c. oil
1 16 oz. can pumpkin puree
(reserve 3-4 T. for frosting)
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda


For ½ sheet (17x11 in.) multiply ingredients by 1½

1. Lightly grease and flour 15x10x1 inch pan.
2. Stir dry ingredients together; set aside.
3. Beat eggs, sugar, oil and pumpkin until light and fluffy.
4. Add dry ingredients; beat until well blended, about 2 minutes.
5. Bake 25-30 minutes at 350º.
6. When cool, frost with Pumpkin Cinnamon Frosting or Cream Cheese Frosting.

This was served at Frank and Francie's 60th wedding anniversary dinner. The Rohleder cousins who are connoisseurs when it comes to pumpkin cake gave it thumbs up!
