Pinto beans, lg. bag
2 c. diced ham or 2 meaty ham hocks
8 carrots
8 celery stalks
2 T. salt
2 T. soda
1 lg. onion, chopped
2 qt. tomatoes
1 pod red pepper or 2 tsp. chili powder
2 T. lemon juice
Salt and pepper to taste

Directions:
Wash beans thoroughly. Place in large kettle, cover with water; add salt and soda. Soak over-night. In the morning, drain and add 2 quarts water and diced ham or ham hocks; bring to boil. Simmer slowly 2 1/2 to 3 hours. Add onion, tomatoes, pepper or chili powder, lemon juice, salt and pepper, carrots and celery. Simmer another 30 minutes or until beans are tender. For crock pot, soak as above, combine all ingredients and cook on low 12 to 14 hours.
