2 ½ cups flour, divided
½ cup icing sugar
¾ cup cold butter
4 eggs
2 cups sugar
⅓ cup lemon juice
½ tsp lemon zest or extract
½ tsp baking powder
Additional icing sugar for sprinkling

Directions:
Directions:
Preheat oven to 350ºF. Combine 2 cups flour and icing sugar, cut in butter until it resembles course crumbs. Pat into a greased 9x13 baking pan. Bake for 20 minutes or until lightly browned.
Whisk together eggs, sugar, lemon juice, and zest until frothy. combine baking powder and remaining flour. Whisk into egg mixture. Pour over hot crust. Bake for 20-25 minutes until light golden in color.
Cool completely and dust with icing sugar before cutting into squares.
