1 lb. hot, mild, or sweet Italian sausage
1 large carrot, diced
1 onion, diced
1 T. minced garlic
6 c. chicken broth
1 can (14.5 oz.) petite diced tomatoes
1 can cannellini or other white beans
2 tsp. dried basil and/or Italian seasoning
1 c. dry, uncooked pasta (shells, ditalini, etc.)
6 oz. spinach leaves, coarsley chopped
salt and pepper to taste
Parmesan cheese for garnish

Directions:
Directions:
Remove sausage from casings and brown in a large soup pot over medium high heat, stirring often and breaking apart with a spoon. Remove any excess fat, leaving about a tablespoon in pot.

Add carrots, onion, and garlic; saute until onion is translucent. Add broth, tomatoes (with juice), beans and basil and bring to a boil.

Add pasta, reduce heat and simmer, covered, until pasta is just tender (about 10 minutes). Stir in spinach, salt and pepper. Cook just until spinach is wilted.

Serve with Parmesan cheese on the side.
