2 c. flour
¼ c. butter, softened
1 c. sugar
¾ c. orange juice
1 ½ tsp baking powder
2 T. finely grated orange zest
½ tsp. salt
1 egg, slightly beaten
½ tsp. baking soda

½ c. coarsely chopped walnuts
1 c. raw cranberries, coarsely chopped

Directions:

Preheat oven to 350º F. Grease and flour a standard loaf pan or use baking spray. This recipe will make 3 mini loaves or one regular loaf.

In large bowl, whisk together flour, sugar, baking powder, soda and salt. Add shortening, orange juice, zest and egg and stir just until combined. Stir in nuts and cranberries. Spoon mixture into prepared pan and bake for 1 to 1¼ hours or until toothpick stuck in center comes out clean. Cool in pan on a rack for about 10 minutes then invert onto plate.
