3 medium chicken breasts, boneless and skinless
salt and black pepper
sliced or minced garlic
olive oil

Your choice of stuffing -- 1 slice of cheese no bigger than the breast, about 2 T. of finely chopped vegetable, about 1 T. of flavorful condiment for each breast

i.e.; mozzarella, spinach, chopped sundried tomato
swiss, asparagus, dijon mustard
cheddar, broccoli, chopped ham
fontina, spinach, mushrooms

The choices are endless; just use your imagination and pick the things you like.

In a small bowl mix olive oil, garlic, salt & pepper. Smash with a fork into a paste. Set aside.

Put breasts on a cutting board, pound the thick end down to no more than ½ inch thickness and either cut a pocket into that part, being careful not to cut all the way through, or butterfly the breast. You can use your fingers to widen the opening a bit. Rub the breast, inside and out, with the olive oil mixture. Stuff with cheese, veggie, and condiment; then seal with toothpicks.

Preheat oven to 350º. Heat an ovenproof skillet (I prefer cast iron), add a tablespoon or two of olive oil and sear each breast on each side for about 2 or 3 minutes until golden brown. Move the skillet to the oven and bake for about 15 to 20 minutes until cooked through. Remove chicken to a plate and allow to rest for a few minutes. If you like you can add about half a cup of chicken broth and 2 T. butter or cream to the skillet and bring to a boil to reduce and thicken. Remove the toothpicks, slice in half, pour skillet drippings over chicken or serve on the side.

Most breasts these days are large enough to serve two people. If you think your guests have larger appetites just increase everything correspondingly.
