1 whole chicken
3 lemons (1 zested,squeezed and scraped out, 2 cut in quarters)
⅓ cup salt
½ cup parsley
¼ cup shallots
2 Tbsp garlic
3 Tbsp butter
2 bay leaves

Directions:
Directions:
Stir together lemon juice and salt. Rub under skin of chicken breast and around entire outside. Place in zip lock for up to 2 days. Preheat oven to 425º Rinse chicken. Combine lemon zest, parsley, shallot, garlic and butter. Put under skin. Put lemon quarters and bay leaves in cavity. Roast in oven for 25-30 minutes. Reduce heat to 350º and continue roasting for 40 more minutes or until 165º internally.
