1 lb fresh fish filets (preferably grouper or snapper)
1 tsp garlic powder
2 tsp onion powder
1 tsp cayenne
2 tsp paprika
1-1½ tsp salt
1 tsp black pepper
1 tsp dried thyme
¼ tsp cumin
2 Tbsp melted butter
cooking oil
lemon wedges
For Salsa
3 tbsp finely diced jalapeno pepper
1 medium red onion, divided (½ diced-½c, other ½ thinly sliced-¾c)
1 cup loosely packed cilantro, finely diced, separated
3 limes, 1 tsp zest and 4 tbsp juice, remaining lime cut into wedges, separated
1 cup uncooked basmati rice plus water to cook in
2½ tbsp olive oil, separated
1 tsp minced garlic
1 can black beans, drained and rinsed
3 cups diced fresh pineapple

Directions:
Directions:
First make salsa and rice and beans recipes.
In a small pot, cook rice according to package directions. Add 1 tbsp olive oil to a large nonstick pan and heat to medium high. When oil is shimmering, add 1 tbsp diced jalapeño and the ¾ cup thinly sliced onion. Saute, stirring frequently, until softened. Add garlic and stir for about 30 more seconds. Add in black beans and stir until warmed through, 2-3 min. Remove from heat and then add black bean mixture to cooked rice. Add 2 tbsp lime juice and 2-3 tbsp diced cilantro. Season rice mixture to taste with salt and pepper. Cover and keep warm.
Salsa
In small bowl,combine 1 tsp zest, 2 tbsp juice, ¾ cup cilantro, 2 tbsp jalapeno, ½ cup diced onion and diced pineapple. Add salt and pepper to taste. Stir together.
Mix all blackened seasonings together and dredge the fish in the mixture. Drizzle with melted butter and saute in a very hot (not burning), heavy cast iron skillet until blackened, only a few minutes per side. Serve with salsa, beans and rice. (May also just serve with lemon wedges and tartar sauce.)
