vegetable oil
3 bell peppers-any color, seeds removed & cut into 1/4 inch slices
1 yellow onion, thinly sliced

1-1 1/2 lb chicken breast, 1/4 inch slices
2 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp sea salt
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp coriander
1/8 tsp chili flakes or cayenne pepper
tortillas
chips
salsa
favorite fajita topping

Directions:
Directions:
1. Preheat oven to 400º. Place a standard size rimmed baking sheet in the oven while it heats so that it's nice & hot.

2. In a lg bowl toss 1 TBS oil with the bell peppers & onions.

3. Carefully remove the hot sheet for the oven & spread the peppers & onions evenly across the sheet.

4. Return to oven & bake 8 min.

5. In the same bowl, combine 1 TBS oil along with chicken, chili powder, cumin, garlic powder, salt, pepper, paprika, coriander & chili flakes.

6.Remove the sheet from the oven, drain off any excess liquid. Spread the chicken over the peppers & onions. Make sure to separate pieces of chicken from each other so they don't bake together.

7. Return to oven & bake for 15-20 minutes or until vegetables are roasted & chicken is golden brown.

8. Serve with tortillas, chips & favorite fajita toppings.

Spanish Rice is a great side dish.
