4 Boneless chicken breasts
½ cup all purpose flour
2 Tbsp unsalted butter
2 cups thinly sliced white mushrooms
1 Tbsp olive oil
½ cup Marsala wine
salt & pepper to taste
1 Tbsp chopped fresh parsley

Directions:
Directions:
Flatten chicken breasts between two pieces of wax paper using a mallet. Dredge lightly in flour. Melt butter in large skillet, add mushrooms and cook on medium heat, stirring until nicely browned. Remove mushrooms from skillet and set aside. Add olive oil to skillet and heat until very hot. Saute chicken over med-high heat until browned on both sides and 165º internally. Remove and keep warm. Add Marsala to the skillet and simmer until it reduces slightly, 2 minutes. Add reserved mushrooms, salt & pepper and parsley to skillet until heated. Add back chicken until heated through. Top chicken with the sauce from the pan.
