3 cups elbow macaroni, uncooked (16 oz pkg = approx 3 1/2 cups)
2 Tbsp. butter
2 Tbsp flour
2 tsp. salt
1/4 tsp dry mustard
dash cayenne pepper
2 1/2 c. milk
1 egg beaten
3 cups shredded cheddar cheese
1 Tbsp. flavored bread crumbs
1 Tbsp. Parmesan Cheese
1 can of spam, diced
Directions:

Cook macaroni according to package directions. Drain and set aside.

In saucepan, melt butter over low heat. Add flour, salt, mustard and cayenne, stirring until combined. Add milk to flour mixture and cook over low heat, stirring constantly, until thickened. Add egg and cheese, stirring until cheese is melted. Combine cooked macaroni and cheese mixture -- pour into greased 2 1/2 quart casserole.

Sprinkle top of macaroni with bread crumbs and parmesan cheese.

Cover and bake at 350 for 20 minutes. Uncover and bake for 10 minutes longer or until heated through. Makes six servings.

I now sometimes mix all the cheese and mac together and then split to make some with spam, some without, or some with chopped green chilies. As to the amount of cheese to make the sauce, I just keep adding until it tastes really cheesy.
