To make a perfect white sauce for cauliflower or broccoli use the 1-1-1 method (as Ganelle Bakke explained).

1 Tablespoon Butter / Margarine
1 Tablespoon Flour
1 Cup Milk
Pepper to taste
A little grated nutmeg for extra flavour





Directions:
Directions:
Heat pot to melt butter into flour to create a "paste" called a roux.

Slowly add in milk, stirring quickly with a whisk until sauce begins to thicken

When consistency of a thick sauce (not too runny, not too thick) take off of burner.

This is a "hands-on" sauce to cook - if you leave the mixture without stirring the pot will burn quickly and burnt milk is never easy to clean.

A family favourite especially at Christmas and Thanksgiving has always been Cauliflower and Brussel Sprouts with a cream sauce or using this same sauce and making a cheese sauce by adding in cheddar cheese for broccoli.

This is also the start of a good cream soup if you add in some chicken stock and your vegetables...
