2 boneless turkey tenderloins ( or pork )
1 tsp kosher salt
1/2 tbsp olive oil
1/3 cup green onions, chopped
2 cloves garlic, minced
1 - 1/4 cup butternut squash, diced
1/2 cup fresh cranberries
2 tbsp pure maple syrup
1 tbsp water
1 cup kale or spinach
sage to taste
2 tbsp pecans, chopped
1/4 tsp black pepper
6 - 8 pieces of cooking twine
cooking spray

Directions:
Directions:
- heat a large skillet to medium-high
- add olive oil
- add onions and garlic, saute until golden
- add squash, cranberries, maple syrup and water and cover
- cook for 10 minutes
- remove lid and add kale, salt, sage and pepper
- cover and cook for 3-4 minutes then set aside to cool
- stir in pecans
- slice a pocket on the sides of each tenderloin, careful not to cut ends
- season with salt, inside and outside
- stuff each turkey tenderloin with 3/4 cup of the squash mixture
- cut twine and tie 3-4 pieces around the tenderloins
- pre-heat oven to 375º
- in a skillet over medium-high, spray with cooking spray
- carefully sear each tenderloin on all sides
- transfer the tenderloins to a greased baking dish
- place in the oven and bake for 25 - 30 minutes
- slice into 4 slices and serve
