2 lbs fresh tomatoes, halved (plum works best)
1 Large yellow onion, sliced
1-2 jalapeno peppers
4 cloves garlic, skins still on
olive oil
¼ cup chopped fresh cilantro
sea salt and fresh cracked pepper to taste

Directions:
Directions:
Preheat the oven to 450º Place halved tomatoes (cut size down), onion slices, whole jalpeno and garlic on a large rimmed cookie sheet. Drizzle with olive oil and salt and pepper to taste. Place in the oven and roast until tomato skins begin to char. Remove from oven and let cool to room temp. Remove stems from jalapeño and skins from garlic. Place the cooled veggies into a food processor or blender with the cilantro and more salt and pepper to taste. Blend until desired consistency. Pour into a container and chill. Serve with chips.
