Ingredients:  
1 whole chicken (boiled, deboned & shredded) (save chicken broth)
1 tsp. olive oil
1 medium onion, chopped
3 cloves garlic, chopped
6 to 8 c. saved chicken broth
1 (15 oz.) can corn, drained
1 (15 oz.) can black beans, rinsed & drained
1 (15 oz.) can diced tomatoes (with juice)
2 tbsp. ground cumin
1 tbsp. chili powder
salt/pepper to taste

Directions:
Directions:
- In medium pot, heat oil over medium heat. Saute onion & garlic until soft. Stir in broth, chili powder and cumin. Bring to boil. Lower heat and simmer for 15 minutes.
- Stir in shredded chicken, corn, beans, diced tomatoes. Simmer on low/medium heat for 20 minutes. Salt & Pepper to taste.

- Ladle soup into serving bowls and add toppings:
Tortilla Chips
2 avocados, diced
1 (8 oz.) pkg. shredded cheddar cheese
3 green onions chopped
1 (8 oz.) container sour cream
3 sprigs fresh cilantro, chopped
