5 medium baking potatoes
8 slices bacon
1 c. sweet onions- chopped
⅔ c. flour
6 c. chicken broth
2 c. half and half
¼ c. fresh parsley-chopped
1½ tsp. garlic - minced
1½ tsp. dried basil
1 t. salt
1 tsp. ground pepper
½ tsp. hot sauce
1¾ c. shredded cheddar cheese, divided
1 c. green onions, sliced-divided
¼ c. fresh parsley - chopped

Directions:
Directions:
1. Wash potatoes, prick with fork several times.
2. Bake at 400º for 1 hour or until done; let cool.
3. Peel potatoes and slice cross wide.
4. Cook bacon in a large skillet until crisp; remove bacon.
5. Reserve droppings in skillet.
6. Crumble bacon and set aside.
7. Cook onion in drippings, stirring constantly, until tender.
8. Add flour and stir well.
9. Cook 1 minute stirring constantly.
10. Gradually add chicken broth; cook over medium heat, stirring constantly until mixture is thickened and bubbly.
11. Stir in potato, half-and-half, and next 6 ingredients.
12. Bring to a simmer and cook uncovered 10 minutes (do not boil).
13. Stir in 1 cup cheese and ¼ cup green onions.
14. Cook until cheese melts, stirring often.
15. Serve.
16. Top with bacon, cheese, green onions and parsley.

I usually add the bacon to the soup.
