1 lb boneless skinless chicken breasts, each sliced into 3 pieces
¾ cup Franks Red Hot Sauce
1 8oz cream cheese, cut into 8 pieces
1 8oz sour cream
2 cups shredded cheddar cheese, divided
⅓ cups crumbled blue cheese (optional)
¼ cup sliced scallions
¾ cup chopped celery

In the bottom of a slow cooker, layer the chicken breast pieces. Pour hot sauce over the chicken. Cover with lid and cook on HIGH temperature until chicken is fully cooked, about 1½ hours. (check thickest piece for 165º. Using tongs, transfer chicken from slow cooker to a cutting board, leaving hot sauce in slow cooker but turning it off temporarily. When chicken is slightly cooled, cut into small pieces. Add chicken back into slow cooker with hot sauce, add cream cheese, sour cream, 1½ cups cheddar cheese and blue cheese if using. Stir a bit. Cover with lid and cook on high for another 1½ hours, stirring the mixture halfway through the cooking process. Stir mixture again and then top with remaining ½ cup cheddar cheese, celery and scallions. Cover with lid and let cheese melt, about 15 minutes. Reduce heat to LOW or Warm setting. Serve with crackers, chips, celery sticks or carrots.
