4 boneless skinless chicken breasts (flatten slightly for uniform thickness)
1 cup store bought pesto sauce
1 large tomato, 8 slices
extra virgin olive oil, for drizzling
1 cup shredded mozzerella cheese

Directions:
Directions:
Preheat oven to 400º F
In a 9x13 glass pan, add the chicken breasts trying not to overlap. Spread the pesto sauce on top of each piece. Top with the tomato slices. Drizzle with a little olive oil. Top with the shredded cheese. Cover dish with aluminum foil that is sprayed with Pam spray so cheese doesn't brown too quickly and so cheese doesn't stick to foil. Bake until the chicken is reaches 165º, about 25 minutes.
(serve with cooked pasta thats tossed with leftover pesto sauce or jarred pasta sauce and a side salad for an easy meal)
