3 1/2 lbs. boneless, skinless chicken
2 sweet onions, chopped
3 stalks celery, chopped
2 jalepeno peppers, seeded and chopped
1 handfull of cilantro, chopped
1 tsp. chopped garlic
1/2 tsp. chili powder
heavy dash of cayenne pepper
white pepper
2 tsp. taco seasoning
4 cans cannellini beans, undrained
4 cans white, sweet corn, undrained
juice of 1 lime
48-64 oz. chicken broth
8 oz. cream cheese
8 oz. four cheese mexican blend cheese
1 pint heavy cream

Directions:
Directions:
Saute chopped, fresh vegetables with herbs and spices in a small amount of olive oil until cooked.

If desired, use a meat tenderizer on chicken prior to boiling in chicken broth. Boil chicken until done then chop retaining broth. Add chicken, vegetables, beans, corn and lime juice back to broth, bring to simmer and cook for about 2 hours or until done. Add cream cheese, cheese and cream and simmer about 30 minutes.

Alternative cooking method: Place all ingredients except dairy products in crock pot and cook 8 hours on low. Remove chicken, chop and return to chili. Add cream cheese, cheese and cream and cook for about 30 minutes.

Makes approximately 2 gallons. Recipe can be halved.
