8 slices bacon
1 onion, chopped
1 green bell pepper, seeded and chopped
4-5 tbsp sugar
½ cup white wine vinegar
1-2 tbsp water
1lb shrimp, peeled and deveined
3-4 green onions, chopped
Quick grits
Shredded cheddar cheese

Directions:
Directions:
In a skillet over medium-high heat, cook bacon until crispy. Remove bacon from heat, and set aside. Add onion and pepper to your bacon grease, cooking until tender. Add sugar, vinegar, and water to your vegetables. Stir until it starts to thicken. You may need to adjust your sugar and vinegar to desired taste and consistency. Once it starts to thicken, add shrimp and cook until shrimp are pink. Remove from heat.

Prepare grits according to package directions. Once done, stir in shredded cheddar cheese. place grits on plate, top with shrimp and gravy, then top with chopped green onions and crumbled bacon
