4oz Gouda cheese, shredded
8 slices bacon, cooked and crumbled
¼ cup fresh parsley, chopped
1 Granny smith apple, diced
4 thick boneless pork chops (2 inch thick)

Directions:
Directions:
Preheat grill for medium heat.

In a small bowl, combine cheese, bacon, parsley, and apple.

Using a sharp knife, cut a pocket into each pork chop, leaving the sides and back in tact. Stuff the mixture into the pocket, and close with a toothpick. Season the outside with salt and pepper, or your favorite rub.

Lightly oil the grill grate. Grill over medium heat for 5-8 minutes on each side, or until pork is done.
