2 c. chopped onions
4 cloves garlic, minced
2 T. olive oil
1 4.5 oz. can diced green chilies
3 tsp. chili powder
1 tsp. dried oregano, crushed
⅛ tsp. cayenne pepper
3 15 oz. cans white kidney beans, rinsed and drained
2 14.5 oz. cans reduced sodium chicken broth
5 c. cubed cooked chicken or turkey
4 oz. Monterey Jack cheese with jalapeņo peppers, shredded

Directions:
Directions:
1. In a Dutch oven, cook onions and garlic in hot oil over medium high heat for 5-6 minutes, stirring often until tender.
2. Stir in chilies, chili powder, oregano, and cayenne pepper.
3. Cook 1 minute.
4. Mash 1 can kidney beans.
5. Add all kidney beans and broth to Dutch oven.
6. Bring to simmering.
7. Cook covered 10 minutes.
8. Stir in turkey or chicken.
9. Cook about 10 minutes until heated through.
10. Stir in cheese until melted.
