6 slices bacon
2 heads of cauliflower cute into bite sized pieces
salt/pepper
6 oz of cream cheese, room temp
2 C shredded Cheddar
4 green onions

Directions:
Preheat 425 degrees

Cook bacon

Toss cauliflower with 2 T oil, salt/pepper to taste and roast for 30 minutes

Mix cream cheese and 1 C of Cheddar in a bowl. Dollop on cauliflower.
Then sprinkle with remaining 1 C Cheddar and bake for 7-10 minutes. (15 if cold)

Sprinkle bacon and green onion on top.

Alternate version: Leave off cream cheese and substitute it for 2/3 C sour cream and 1/4 C cream.
