1 cup strawberries, washed and stemmed
¼ cup balsamic vinegar
¼ cup extra-virgin olive oil
1 tbsp Dijon mustard
1 clove garlic, minced
¼ tsp salt

Directions:
Directions:
Preheat oven to 425º.
Line a baking sheet with foil, folding the edges up to prevent juices from running out. Roast for 15-20 minutes, or until caramelized.
Once the strawberries have cooled, add all the ingredients to a blender. Be sure to include the strawberry juices. Puree the mixture until smooth and consistent.
Keep refrigerated.
