4 egg whites, at room temperature
1 cup sugar
1¾ tsp baking powder
¼ tsp vanilla
2 cups saltine crackers, coarsely broken
¾ cup pecans, chopped

Directions:
Directions:
Preheat oven to 325º.
Whip egg whites until soft peaks form. Gradually add sugar mixed with baking powder. Add vanilla and mix thoroughly.
Add saltine crackers and pecans, gently folding by hand. Pour into a greased 9" pie pan.
Bake for 1 hour.
Remove from oven and cool upside down. When thoroughly cooled, top white whipped cream and chopped pecans.
