4 boneless, skinless chicken breasts, pounded thin
8 oz reduced fat cream cheese
1 cup shredded cheddar cheese
2 ½ tbsp jarred diced jalapenos
3 tbsp cooked bacon, crumbled
1 tbsp dried pasrley
1 tbsp garlic powder
½ tbsp onion powder
1 shallot, diced
8 slices Colby Jack cheese

Directions:
Directions:
Microwave cream cheese for 30 seconds to soften. Added cheddar cheese, jalapenos, bacon, parsley, garlic powder, onion powder, and shallot, and mix well. Place mixture on one half of each flattened chicken breast, folding the other half over, and securing with a toothpick. Season both sides of each breast with salt and pepper.

Grill over medium high heat for about 5 minutes on each side. Place a slice of cheese on each chicken breast right before removing from the grill, allowing it to just begin to melt before removing chicken from grill.

Remove from grill, and let sit for 5 minutes before serving.
