One chicken, cut into pieces
¼ cup oil
1 and ¼ cup flour
½ teaspoon ground black pepper
½ teaspoon salt
1 cup chicken broth

Directions:
Directions:
1. Wash and dry chicken.
2. Sprinkle and season chicken well with salt and pepper.
3. Dredge chicken in one cup of flour, set aside
4. In large skillet, heat oil and fry chicken until deep brown.
5. Remove browned chicken from skillet
6. Add 2 tablespoons of remaining flour to skillet
7. Brown flour, making sure not to burn.
8. Add chicken to skillet, add chicken broth, cover and cook 25-30 minutes


Smother over rice or mashed potatoes and enjoy.

This chicken reminds me of my mother’s smothered chicken. She could cook it up so quickly. She would leave out the mushrooms and onions and just have a sweet rich fried chicken with gravy. It was so delicious. Still make it the old-fashioned way. Enjoy!
