Baby spinach
Button mushrooms, very thinly sliced
Red onion, thinly sliced

Dressing:
1/4 c. red wine vinegar
1 Tb. dijon mustard
1/4 c. extra virgin olive oil
Himalayan salt
Fresh cracked pepper

Add-ins:
Croutons

Directions:
Prepare dressing in a jar (can last for 1 week in fridge).

In a salad bowl, toss mushrooms in dressing. Let stand 5 minutes.

Add spinach and onions to bowl and toss. Serve immediately.
