1 lb ground beef
1 large onion, chopped
1/2 cup uncooked instant rice
1/2 tsp salt
1/2 tsp pepper
10 3/4 oz condensed tomato soup
1/4 cup water
4 cups shredded cabbage

Optional toppings : Sour cream, chopped chives

KR Notes:

I double this recipe. For those of us that like to minimize the meat, you can use more rice and less hamburger. If you like cabbage you can also increase the amount of cabbage.

I am a very lazy cook, and have used a package of slaw mix It worked fine and I liked that it had shredded carrots in it. The only draw back is that the cabbage pieces aren't very large.

Heat oven to 400 degrees
Cook beef and onion in a 10" skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown, drain. Stir in rice, salt, pepper, soup and water.
Place cabbage in ungreased 2 quart casserole. Spoon beef mixture over cabbage.
Cover and bake about 45 minutes or until hot and bubbly.
Top with sour cream and chives if desired.
