2 cups flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon

4 eggs
1 cup oil
4 cups grated carrots
½ cup chopped pecans

Directions:
Directions:
Mix together in a bowl the flour, sugar, baking powder, salt, and cinnamon. Set aside.

In an electric mixer beat the eggs until frothy. Slowly add the oil. Then add the dry mixture gradually.Then stir in the carrots and pecans.

Pour batter into 3 8" round greased and floured cake pans.

Bake at 350ºF for 25-30 minutes.

4 Tablespoons softened margarine
2 3-oz packages softened cream cheese
4 1/2 cups powdered sugar.
1 teaspoon vanilla extract
1 teaspoon almond extract

Directions:
Directions:
Cream the margarine and cream cheese, then add the powdered sugar. Beat until smooth. Then add the vanilla and almond extracts. Spread on cooled cake.
