1 large eggplant
evoo
minced garlic
chopped parsley or cilantro
fresh lemon, squeezed
Himalayan pink salt
fresh cracked pepper

Directions:
Directions:
Cut eggplant in half, then quarters. Cut quarters in half, widthwise. Salt eggplant and allow to sweat for 30 min.

While salting eggplant, chop parsley. Line baking sheet with parchment paper. Preheat oven to 400º.

Rinse the salt from eggplant and pat dry. Put slices on baking sheet, skin down. Brush with olive oil and season with garlic and salt and pepper.

Roast until soft and golden, about 30 min. Remove from oven. Sprinkle with lemon juice and fresh parsley.
