Here are the step by step instructions for getting the turkey in the oven! :D

- Spray cooking spray all over roasting pan

- Make foil strips (handles). Take 2 pieces of foil around 3 feet long. Fold lengthwise to about 2 - 3 inches wide. Put both into roasting pan at opposite sides and spray with cooking spray.

- Put turkey in the sink and remove wrapping. Take out neck and giblets. Rinse the inside. Dry insides with paper towels.

- Keeping turkey in sink, position the turkey with legs pointing down, and stuff the small end. Truss with a couple of skewers. It doesn't have to be perfect!

- Turn turkey upside down and repeat with large cavity. Don't stuff too tightly.

- With roasting pan beside the sink, lift turkey out of the sink by it's legs and place in the roasting pan. Probably diagonally with a big bird. Tie legs together. If the butt end is hanging over the pan edge, tuck a piece of foil around it so fat doesn't drip into your oven. Position turkey with foil strips so that they work as handles to remove the turkey.

- Dry outside of turkey.

- Melt a cup of butter. Pour over the turkey and rub all over the legs etc.

- Cover the turkey with foil. Tent it loosely. Put turkey on the bottom rack. Cook @ 350 degrees for two hours. Turn down to 325 degrees and cook until legs are loose and turkey reaches 160 - 170 degrees. Baste every hour after 4 hours or so. When turkey reaches temp, remove foil and cook until desired brownness.

- When turkey is done, remove to a platter. Tent with foil and tea towel. Turkey can rest for up to 2 hours!
