2 cups sugar
1 cup oil
3 eggs
3 tsp. vanilla
2½ cups flour
½ baking cocoa
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
¼ tsp baking powder
2 cups shredded zucchini

Directions:
Directions:
Beat sugar, oil, eggs and vanilla until well blended. Combine flour, cocoa, salt, soda, cinnamon and baking powder; gradually add to sugar mixture until well blended. Stir in zucchini. Fill loaf pans 2/3 full. Sprinkle with chocolate chips (if desired). Bake at 350º for 50-55 minutes. Cool before removing to pan.
