1 ready-to-use pie crust
1 pk Neufchatel, softened
1/3 c splenda
1 c fat free Greek yogurt
1 tsp pure vanilla extract
1 tsp almond extract
1 carton sugar-free whipped topping, thawed
1/4 c cacao powder (cocoa powder can also be used)
1/4 c unsweetened coconut, toasted
1/4 c almond slivers, toasted

Preheat oven to 350º F

Place coconut and almonds on separate baking sheets

Cook coconut for 3 to 5 minutes, or golden brown. Once done set aside.
Cook almonds for 5 to 7 minutes, or until toasted. Once done set aside

Place softened Neufchatel and splenda in a large bowl. Beat (with hand mixer) until completely combined
Add Greek yogurt, almond extract and vanilla extract to mixture. Beat until thoroughly combined
Add entire carton of whipped topping, folding it into the mixture with a spatula

Put half of the mixture into the pie crust

Add cacao powder and powder sugar to the mixture in the bowl. Beat until thoroughly combined
Transfer mixture to pie crust
Place in fridge for ~ 4 hours
Sprinkle with toasted coconut and toasted almonds
Serve immediately for best results (coconut and almonds start to soften if left overnight)
