2 Lb Ground Beef 80/20
1 Diced Onion
1/2 C Green Bell Pepper diced
1 1/2 sleeves of Ritz Crackers crushed
4 Oz Sharp Cheddar or Colby Cheese shredded
3 Eggs
1/2 C Milk
1 Tsp Salt
1/4 Tsp Black Pepper

Topping:
3/4 C Tomato Katchup
2 Tbsp Brown Sugar
1 Tsp Mustard

Directions:
1. Preheat oven to 350º F
2. Combine Ketchup, Brown Sugar, and Mustard for use as topping
3. Combine Eggs, crushed Ritz crackers, Cheese, Milk, Salt and Black Pepper. Mix well.
4. Combine mixture with Ground Beef and coarse-mix, Do not over mix.
5. Form into a Loaf and place into a Foil Cooking pan. Leave breathing room around Loaf.
6. Bake at 350º for 30 minutes.
7. Remove from oven and spread the topping mixture over the Meat Loaf and continue baking until center of Loaf reaches 160º about 30 to 45 minutes.
8. Allow to cool for 15 minutes and Serve!
