1/4 cup flour
2 tbsp. chopped parsley (2 tsp. dried)
1/8 tsp. white pepper
6 medium potatoes (2 lbs.) - 6 cups
2 onions
1/2 cup parmesan (low or non-fat)
2 cups evaporated skim milk
salt

Directions:
Directions:
Combine 1st 3 ingredients in small bowl (flour mixture). Slice potatoes and onions. Coat and 8 x 11 baking dish with pam. Layer 2 cups potatoes, 1/2 onion, sprinkle with 1/2 flour mixture and 2 tbsp. parmesan cheese. Repeat layers, then top with remaining potatoes. Top with milk and 1/4 cup parmesan cheese. Cover with foil and bake @ 350º for 45 minutes. Remove foil and bake additional 30 minutes.
