1 cup cake flour
1 1/2 cup confectioners sugar
12 egg whites
1 1/2 tsp. cream of tartar
1/4 tsp salt
3/4 cup additional confectioners sugar
2 tsp. vanilla
1/2 tsp almond extract

Preheat oven 375º

Sift flour and first amount of sugar. Set aside.

In a large bowl using an electric mixer beat egg whites (if there is even a drop of egg yolk in with the whites start over. Only egg whites will work). Add cream of tarter and salt until foamy. Add the second amount of sugar 2 Tbsp at a time until stiff peaks form.

Fold in flavorings. Sprinkle flour and sugar mixture you have set aside 1 cup at a time over meringue. Gently fold until just mixed.

Push batter into ungreased tube pan. Gently use a knife to cut through batter.

Bake 30 to 35 minutes. Hang pan upside down over a tall bottle until cake is completely cool. Use a knife to cut around the edges of the cake pan and gently allow the cake to slide down onto a serving plate.

This is a really easy cake to make. It tastes so much better than store bought. Give it a try. My mom made this for Easter every year. She would cover it with sliced strawberries and whipped cream. Yum!
