2 1/4 cups cake flour
1 1/2 cups sugar
3/4 cup mayonnaise
2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp salt
1/2 tsp group allspice or ground ginger
3 eggs
1 8 oz. can crushed pineapple in juice (do not drain)
2 cups finely shredded carrots
3/4 cup chopped pecans

Heat oven to 350º

Grease and flour 2 round 9 inch pans

Beat all ingredients except carrots and pecans in large bowl on low speed 30 sec. scrapping bowl constantly. Beat on medium speed 3 min.scraping bowl occasionally, stir in carrots and pecans. Pour into pans

Bake 30 to 35 min or until toothpick inserted in center comes out clean; Cool 10 minutes. Remove from pans onto cooling racks. Allow layers to cool completely.

Ice with cream cheese frosting.
